80 g raisins
90 g milk, g instant dry yeast 5g
Coffee liquid: Instant coffee powder 7g + warm milk 15g
40g sugar, 5g salt, 1 egg (54g), coffee liquid
250 g bread flour
30 g butter
Mocha biscuit ingredients for topping
Room temperature butter 45g
50g sugar, a pinch of salt.
27 g of eggs. 2-3 times
Coffee liquid: Instant coffee powder 1g + hot water 3g
100g Cake flour (or all-purpose flour), 6g baking powder.
When using a stand mixer (depending on the stand mixer specifications)
1. Add all ingredients except butter.
2. Mix 2~3 minutes on low speed.
3. Mix 5-6 minutes at medium speed
4. Add butter.
5. Mix 5-6 minutes at medium speed

Spring, Autumn: Room temperature, Summer: Refrigerator storage
Winter: Microwave milk for 10-20 seconds, Egg: room temperature
Fermentation time varies depending on temperature and humidity.
Use the oven after preheating.
